I read your post before, and confess I too hesitated for a while with the 7027 when i tried both, while looking for a nice moonphase.
I think you cant go wrong with either to be frank, and as usual its a very subjective and personal choice.
In my case, several points convinced me for the 7787 (other than the fact that it is available in red gold, which is so stunningly beautiful in real life if you have european-mediterranean skin as i have). ;-)
Firstly, the enamel - just like you, i already have guilloché models from Breguet, and the enamel is a way to complete the history side - as both enamel and guilloché featured in original historic models from the Master.
Secondly, strangely enough, I needed a watch that would be not overly complicated to go to board type of meetings, so somewhat more dressy. For this, i decided to myself i should not take a model with a date (for which this model was perfect, allowing me both the clear enamel dressy style, combined with the dreaming side during boring business meetings).
Thirdly, again strangely, i am very much drawn to the movement. A solid classic Lemania, which inspired a couple of other brands, but with an interesting twist of using silicon. I decided to try for myself this new idea of non-magnetic silicon - and also, i confess i really enjoy when a watch is very reliable and accurate, so i am hoping that this one will meet my expectations in terms of time keeping. So far, it is looking very promising, but since i only own it for two weeks or so, i am still testing it very closely before claiming anything.
Fully relate to your wallet point, collecting is an addiction, and you know you're bitten from the moment you buy a watch, and at the AD at delivery you start already thinking about your next two watches.
Anyway, highly recommend the 7787.
